Made with our organic apples and buckwheat this loaf is moist and very tasty. 

Aside from protein and fibre, buckwheat is an excellent source of selenium, a trace mineral which if lacking can be the cause of constipation and leg cramps. 

Buckwheat is a long lasting food, that if eaten in the morning (without wheat and other cereals) can get you all the way through to dinner. 

It is also good for the garden. It can be used as a green manure or planted along side desired crops, providing light shade in summer and keeping quack grass away. Its deep roots bring up nutrients and forge pathways in the soil. 

It is easy to harvest and can be dried and milled in a high speed blender without hulling. It can also be sprouted, dried and milled for even more goodness. 

The other ingredients in this loaf are cinnamon, baking soda, salt and grapeseed oil. 

Grapeseed oil, by the way, contains high amounts of oligomeric proanthocyanidins (OPC) which among other things communicates that enough fat is stored in the cells. Other sources rich in OPC are wine and cinnamon. The wine drinkers that I know tend to not be overweight.
